WBT@Home Recipe Spotlight: Vegetable Kugel

INGREDIENTS:

• 3 tablespoons olive oil
• 1 chopped onion    
• ½ cup chopped carrots
• ½ cup chopped red pepper
• ½ cup chopped parsley
• 1 cup yellow squash
• ¼ cup chopped basil
• 1 pkg frozen defrosted spinach (squeeze liquid out)
• 2 gloves garlic pressed or minced
• ½ teaspoon pepper
• ½ teaspoon salt
• 4 eggs beaten
• 2 matzah (soak in water until soft) and crumble


DIRECTIONS:

1. Saute’ onions in olive oil for about 10 minutes until soft.

2. All vegetables can be chopped in a Cuisinart. Add vegetables (except spinach) to onion mixture and cook for 5 minutes

3. Pour into a 9 x 9” greased baking dish

4. Bake for 45 minutes at 350 degrees.

Couldn’t be easier to prepare.  Very tasty and healthy!!!
